Chocolate Chip Mug Cookie

Small microwave-safe bowl
Small plastic spatula
Microwave-safe mug


1 Tbsp Earth Balance Butter
3 tbsp coconut sugar
1/2 tsp apple cider vinegar
1/2 tsp vanilla
1/2 tsp baking soda
6 Tbsp all purpose gluten-free baking blend
1 Tbsp almond milk
1 Tbsp Enjoy Life Chocolate Chips


  1. Place butter in a small microwave-safe bowl and cook until melted (30 to 60 seconds).
  2. Mix in coconut sugar with a small rubber spatula.
  3. Add apple cider vinegar, vanilla and baking soda. Mix thoroughly.
  4. Add in all purpose baking blend and almond milk. Mix until all ingredients are incorporated.
  5. Mix in chocolate chips and transfer to a microwave-safe mug. Cook for one minute on high then devour. Enjoy!
