If you know me, you know that I have a MAJOR sweet tooth! I used to eat ice cream every single day growing up…healthy habits I know.
These days my body doesn’t enjoy copious amounts of sugar, but I still crave sweets. One of my favorites sweet treats to quench my cravings is ‘Nice Cream’—a healthy and satisfying twist on ice cream!
Nice cream is essentially frozen fruit (plus whatever add-ins you’ve tossed in!) that’s been blended down to a creamy consistency.
This Butternut Banana Nice Cream is not only chocolatey and delicious but incorporates one of my other faavvvorite foods: squash! I used butternut squash for its creamy consistency and sweet buttery flavor. The results were drool-worthy to say the least!
Butternut Banana Nice Cream
Prep time: 5 minutes
Total time: 5 minutes
Yield: 1 serving
Blender (see mine!)
6 cubes of pre-roasted (or steamed) butternut squash
2 bananas, frozen
2 Tbsp cacao powder
1/4 tsp ginger powder
- Add squash to the blender and blend on high until transformed into a puree.
- Add remaining ingredients and blend on low until there are no chunks and all ingredients are thoroughly mixed.
- Transfer to your serving bowl. Add your desired topping and dig in!
